All this building and landscaping has made us pretty ravenous lately. Luckily I’ve been in a major cooking mood what with the change in seasons and all. Just seeing all the green stuff starting to sprout and open is inspiration enough. The other night I whipped up a cream cheese lasagna out of Loba’s at Anima recipe book, The Enchanted Pantry. Her recipe calls for cutting raw veggies and placing them in some design on the top of your creation. soooo, what with spring in the air and all……..

The girls digged it. They gobbled this stuff up! And Abigale, my always surprisingly vegetarian head begged for the one stalk of asparagus.

Today, my mom came over to help with the deck in exchange I would feed her. Buffalo and Angus skillet meatloaf, oven potatoes and salad fresh with young dandelion greens straight from the yard was on the menu. I also came across this awesome recipe for Rosemary Lemon Butter Cookies in this month’s Vegetarian Times magazine. Let’s just say two batches of these bite sized little goodies disappeared in less than half an hour.
